CHARLOTTESVILLE, VA (CVILLE RIGHT NOW) – Five of the area’s most notable and accomplished chefs are teaming up to raise money for the Cystic Fibrosis Foundation’s Virginia chapter.

Laura Fonner (Zynodoa), Michael Keaveny (Tavola), Christian Kelly (Duner’s), Walter Slawski (The Catering Outfit), and Tucker Yoder (Broadcloth) are putting together a five-course dinner to raise money for cystic fibrosis research at the second annual Charlottesville Chef’s Table on Thursday at the Wool Factory.

“There are about 850 people in Virginia who have CF, and about one in 31 are carriers of the defective gene,” Beth Saladino, executive director of the Cystic Fibrosis Foundation’s Virginia Chapter, told Cville Right Now. “So, even though we sound like a small disease, it is really affecting more people than you think. We know that the ultimate cure will be a genetic cure and along with that comes a lot of scientific challenges, as well as expense. But we are not taking our foot off the gas.”

Saladino said the dinner is based off an event the chapter has hosted in Charlottesville for the past 33 years. Last year, the Charlottesville version raised about $45,000 for the foundation and the goal this year is to surpass $60,000, Saladino said.

Over 100 attendees are expected Thursday for the evening, which will also include an update on the foundation’s work, and a “Bid for a Cure” auction. The team from Three Notch’d Brewery will be honored for their work on the foundation’s behalf.

The organization has run its annual Brewer’s Ball for the past decade and Saladino said the committee that puts that event together came up with the idea for the Chef’s Table.

The quintet of area chefs released the menu for the event.

Kelly’s offering for the first course is a salad: Local baby greens topped with citrus supremes, chevre, red onion, toasted pistachio and a Dijon thyme vinaigrette.

The second course, from Yoder, will be roasted baby carrots with herbed steel cut oats and a chervil anchoiade.

For the third course, Keaveny will prepare a grilled Atlantic swordfish with tomato-olive relish, roasted fennel and an aged balsamic vinegar.

The fourth course will feature a braised boneless beef short rib with house demi served with Wades Mill cheesy grits, the work of Slawski.

The meal will be capped by a dessert offering from Fonner, a gluten-free red velvet cake with chocolate espresso mousse encased in a chocolate dome.

The Cystic Fibrosis Foundation is a Bethesda, Md.-based non-profit organization with a mission “to cure cystic fibrosis and to provide all people with CF the opportunity to lead long, fulfilling lives by funding research and drug development, partnering with the CF community, and advancing high-quality, specialized care,” according to the foundation’s website.

It has local chapters throughout the country, including a Richmond-based Virginia chapter.
